01 / ABOUT THE PLACE
About this place
Starting with a vegetable surinagashi steeped in Kujukuri clam broth and delicate oboro tofu brought alive by a simple touch of salt, the dinner course sets a buoyant tone that transcends conventional sushi dining. Operating behind a welcoming noren in a quiet corner of Jingumae, Sushi Suntos is an evening-centric sushi bar where seasonal seafood takes centre stage, elevated by precise, unpretentious culinary technique.
Layered Flavours across Small Plates and Hand Rolls
The menu entices with an inventive variety of small dishes, from lightly battered seasonal vegetables and ikejime-prepared tempura to deeply flavourful simmered Kujukuri clams and rich cream cheese steeped in shijimi clam soy sauce. A hand roll of Pacific bluefin tuna sourced from famed wholesaler Ishiji stands out as a memorable high point, blending velvety, fatty tuna with the crisp aroma of toasted nori. The nigiri course delivers satisfying textures, featuring snappy sumi-ika cuttlefish, vinegared kohada (gizzard shad), and rich horse mackerel, interspersed with casual drinking fare such as grilled squid tentacles.
Pairings with Wine and a Soothing Finish
Beyond sake, the beverage program shines with an extensive wine selection, encouraging diners to explore how sparkling, white, or orange wines flatter each dish’s profile. Toward the end of the meal, comforting warmth arrives in the form of ochazuke steeped in broth from the historic dashi purveyor Okume, alongside a silky chawanmushi egg custard made with farm-fresh Toyomaru eggs. A seasonal dessert and a cup of coarsely ground Wakouen green tea bring the evening to a clean, refreshing close.
Centred around a relaxed dining counter, the room is equally accommodating for solo diners and unhurried conversation with a companion. Reservations are accepted for evening dinner service, and modern payment methods including credit cards and PayPay are supported.
